MORROCAN COUSCOUS w/ pomegranate

INGREDIENTS

2 c cooked couscous

6 chopped dates

14 oz chickpeas

2 grated carrots

1/2 c unsalted sunflower seeds

2 small shallots, finley chopped

2 tbsp lime juice

1 1/2 tsp turmeric

1 1/2 tsp cumin

1/2 tsp cinnamon

1 tsp paprika

1/2 tsp Himalayan salt

1/2 tsp black pepper

2 tbsp avocado or coconut oil

pomegranate seeds

plain, unsweetened yogurt

 

INSTRUCTIONS

- In a bowl, mix all ingredients together

- serve with plain yogurt and pomegranate seeds

- Enjoy!
