Blueberry Muffins w/ Lavender

BLUEBERRY MUFFINS W/ LAVENDER

INGREDIENTS

3/4 C whole wheat pastry flour

3/4 C brown rice flour

3/4 C coconut sugar + 1tbsp for topping

2 tsp baking powder

1/2 tsp pink Himalayan salt

1/2 tsp cinnamon

1/4 tsp black pepper

1/3 C coconut oil, melted

1 C vegan yogurt

1/2 C non-dairy milk

1 C fresh blueberries

1 tbsp dried lavender

 

INSTRUCTIONS

- Rinse blueberries under cool water, pat dry

- Preheat oven to 400 degrees

- Line muffin pan with liners or parchment paper

- Mix all dry ingredients

- In a separate bowl, mix wet ingredients

- Using a dough mixer, fold wet ingredients into dry mixture

- Spoon into paper cups

- Sprinkle each muffin with/ lavender and sugar

- Bake 20 min

- Once finished, remove from oven and cool for 15 min

- Enjoy!
