BEETROOT, RHUBARB + GINGER TONIC
Serves: 2 about 20 oz. with foam
Prep time: 30 min, including cleansing
INGREDIENTS
2 tbsp apple cider vinegar
3 medium stalks rhubarb, leaves removed and discarded
3 large red beetroots
3 C spinach
3 large blood oranges
1 medium lemon
4 inch ginger
INSTRUCTIONS
- In a large glass bowl, add 2 tbsp apple cider vinegar and cold water
- Soak rhubarb, beetroot, oranges and lemon for 15 min, scrub lightly with vegetable brush and rinse
- Dip ginger and spinach in solution and rinse
- Peel oranges, lemon and ginger
- Add all ingredients to juicer, adjusting to recommended speeds
- Pour into glassware
- Enjoy!
